Description

These moist and fluffy protein banana chocolate muffins are made with banana puree, almond flour, oat flour, and vanilla protein powder. They’re naturally sweetened, easy to make, and perfect for a high-protein breakfast or snack.


Ingredients

  • 1 cup banana puree

  • 2 eggs

  • ¼ cup honey

  • 1 tsp vanilla extract

  • ½ cup blanched almond flour

  • ½ cup oat flour

  • ½ cup vanilla protein powder (preferably pea protein with stevia or sweetener)

  • 2 tsp baking powder

  • ½ tsp cinnamon

  • ¼ tsp salt

  • ½ cup chocolate chips or chopped walnuts (optional)


Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with 10 liners and lightly spray them with oil.

  • In a large bowl, whisk together banana puree, eggs, honey, and vanilla extract.

  • Add in the almond flour, oat flour, protein powder, baking powder, cinnamon, and salt. Whisk until just combined.

  • Fold in chocolate chips or walnuts, if using.

  • Divide the batter evenly among the muffin liners, filling each about ¾ full.

  • Bake for 18–24 minutes or until a toothpick inserted into the center comes out clean.

  • Cool completely before serving.

Notes

  • For best results, use vanilla pea protein with stevia or another sweetener. Other types of protein powder can be used, but flavor and texture may vary.

  • Spraying the liners helps prevent sticking, especially with high-protein batters.

  • These muffins freeze well and reheat beautifully in the microwave.
