Description

Moist, protein-packed muffins made with creamy cottage cheese and just the right amount of chocolate chips. A perfect healthy snack, breakfast, or post-workout treat!


Ingredients

Scale
  • 1 cup cottage cheese (low-fat or full-fat)

  • 2 large eggs

  • 1 ripe banana

  • 1 tsp vanilla extract

  • ½ cup almond flour or oat flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup chocolate chips (semi-sweet or dark)

  • Optional: 1 tbsp maple syrup for added sweetness


Instructions

  • Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.

  • In a blender or bowl, mix cottage cheese, eggs, banana, and vanilla until smooth.

  • Stir in flour, baking powder, salt, and mix until combined.

  • Fold in chocolate chips.

  • Divide batter into muffin cups.

  • Bake for 18–20 minutes until golden and firm.

  • Cool slightly before serving.

Notes

  • Add cinnamon or nutmeg for extra flavor.

  • Swap banana for applesauce if desired.

  • Store in fridge up to 5 days or freeze for up to a month.
