Description
Moist, protein-packed muffins made with creamy cottage cheese and just the right amount of chocolate chips. A perfect healthy snack, breakfast, or post-workout treat!
Ingredients

1 cup cottage cheese (low-fat or full-fat)

2 large eggs

1 ripe banana

1 tsp vanilla extract

½ cup almond flour or oat flour

1 tsp baking powder

¼ tsp salt

½ cup chocolate chips (semi-sweet or dark)

Optional: 1 tbsp maple syrup for added sweetness
Instructions

Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.

In a blender or bowl, mix cottage cheese, eggs, banana, and vanilla until smooth.

Stir in flour, baking powder, salt, and mix until combined.

Fold in chocolate chips.

Divide batter into muffin cups.

Bake for 18–20 minutes until golden and firm.

Cool slightly before serving.
Notes

Add cinnamon or nutmeg for extra flavor.

Swap banana for applesauce if desired.

Store in fridge up to 5 days or freeze for up to a month.
