Description

These healthy chocolate protein muffins are rich, fluffy, and packed with protein from a blend of cottage cheese and chocolate protein powder. Perfect for breakfast, snacks, or post-workout fuel.


Ingredients

  • 1 cup cottage cheese

  • 2 large eggs

  • 1 ripe banana

  • ½ cup almond flour or oat flour

  • ¼ cup chocolate protein powder

  • 2 tbsp unsweetened cocoa powder

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ¼ tsp salt

  • Optional: ¼ cup chocolate chips or chopped nuts


Instructions

  • Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.

  • In a blender or bowl, combine cottage cheese, eggs, banana, and vanilla. Blend until smooth.

  • Stir in almond flour, protein powder, cocoa powder, baking powder, and salt. Mix until just combined.

  • Fold in chocolate chips or nuts if using.

  • Pour batter evenly into muffin cups.

  • Bake for 18–20 minutes, until a toothpick comes out clean.

  • Cool before removing from the tin. Serve warm or cold.

Notes

  • Use sweetened protein powder if you prefer a sweeter muffin.

  • Add Greek yogurt for extra moisture if needed.

  • Store in fridge up to 5 days or freeze for 3 months.

  • Reheat in the microwave or toaster oven.
